A recipe that highlights the taste qualities of potatoes, with red onion, chopped coriander and cumin.
Perfect for a Monday !
Ingredients
350 g hash brown potatoes
200 g carrots
2 eggs
1 small red onion
1 tsp of chopped coriander
A little olive oil
1 tsp cumin
Salt, pepper
Preparation
Step 1
Finely slice the onion. Wash carrots and potatoes, peel them, then grate them.
Step 2
Break the eggs, beat them into an omelette and add them to the grated potatoes and carrots.
Step 3
Add the chopped red onion, cumin powder and chopped coriander and mix.
Step 4
Heat the oil in a non-stick pan. Make small pancakes by taking a good tablespoon of the mixture and Cook for 4 to 5 minutes on each side until nicely browned.
