Perfect for a Thurday !
Ingredients
1 onion
2 tbsp coconut oil (or other vegetable oil)
3 cloves of garlic
3 to 5 vegetables of your choice cut into small pieces (carrot, eggplant, zucchini, pepper, squash)
1 glass of coral lentils
400 ml coconut milk
2 tbsp of tomato
1 to 2 tbsp curry powder
Preparation
Step 1
In a large frying pan, brown the finely chopped onion with the coconut oil over low heat.
Step 2
When it starts to color, add the garlic. Brown for 1 to 2 minutes.
Step 3
Add the diced vegetables and also fry them for 5 minutes and then Add the coral lentils.
Step 4
Add the coconut milk and the tomato. Mix everything, then add the spices (curry, turmeric and ginger). Add some water and Cook for 15 minutes
Step5
Serve with white rice, chopped fresh parsley and curried roasted cashew nuts.
