Rustle up something a little different for Pancake Day with these fully loaded galettes - topped with egg, tomatoes and peppers. they can be enjoyed at any time of day.
Perfect for a Tuesday !
Ingredients
80g buckwheat flour
5 large eggs, 1 lightly beaten
250ml milk
2 tsp Dijon mustard
1 medium onion
2 bell peppers, red and yellow
160g cherry tomatoes, halved
1 tbsp roughly chopped parsley to serve
Preparation
Step 1
Put the flour into a small mixing bowl, then slowly whisk in the beaten egg and milk until well combined and no lumps remain.
Step 2
In a 30cm frying pan set over a medium-high heat and ladle in a quarter of the batter. Swirl the pan until it’s covered, then cook for 2-3 mins.
Step 3
Fry the onion and peppers in a differnet pan. In the other pan, scatter it over the edges, crack an egg into the centre then fold four sides of the galette over to make it a square shape. Cook for 8-10 mins until the whites of the egg have
