Banana bread cookies

About the Recipe

Delicious cookies offer soft-in-the-middle, crisp-on-the-outside textures with the bonus of being a healthier treat to enjoy with your cuppa.

Ingredients

  • 100g oats

  • 1 ripe medium banana (85g), mashed

  • 3 tbsp honey

  • 2 tbsp coconut oil, melted butter or vegetable oil

  • 25g plain flour

  • 1 egg, separated

  • 1 tsp vanilla extract


Preparation

Step 1

Preheat the oven to gas 4, 180ºC, fan 160ºC. Line 2 baking trays with baking parchment.


Step 2

Put the oats in a food processor with the banana, honey, coconut oil, flour, egg yolk and vanilla extract. Pulse until combined. Add 2-3 tbsp water if necessary – you’re looking for the mixture to hold its shape when pressed together.


Step 3

With damp hands, roll the mixture into 10 balls, then flatten slightly.


Step 4

Place on the lined trays and flatten again slightly with the back of a fork. Brush with the egg white.


Step 5

Bake for 15 mins until starting to turn golden round the edges. Allow to cool for 10 mins, then transfer to a wire rack to cool completely.
